A little bit of Hit and a little bit of that...

This morning was fantastic. My hubby had to work and I didn't so I got to sleep in, sprawled out with the bed to myself. Heaven. I had planned on going to Burnaby Hit when I got up and because I slept in, I needed to put something in my stomach quickly before heading out. So toast it was. Multigrain bread from Cobs with a little bit of butter.

Right after I ate, I headed out. I got to Burnaby Hit and felt good about this decision the second I walked through the door. I love seeing lots of now familiar faces of motivated women all trying to improve themselves. It's a great atmosphere to work out in and I continue to think that joining Burnaby Hit was one of the best decisions I've made in a long time. Today, I pushed myself hard all the way through, and made Bob sway while I beat on him at the end. I'm not sure where that last boost of energy came from, but I do know that Teri helped pull it out of me! I know I've said this over and over but this kickboxing circuit is such a stress reliever...I can't even explain...you've got to try it sometime!!

When I got home, I had a quick shower and made myself lunch. Salad it was!

Romaine lettuce, grape tomatoes, red onion, radish, cucumber and sunflower seeds with 2 capfuls of Italian dressing. It was on a dinner sized plate...but I was hungry! Plus I only filled the middle part.

After lunch, I was craving chocolate big time. I had bought the stuff (finally) to make another batch of protein bars, but I still had to assemble them and let them cool in the fridge for two hours minimum. I didn't think I could wait that long, so I had this in the meantime.

After I ate my granola bar, I assembled my protein bars and decided to walk to Safeway to pick up what I needed for dinner. I stopped in the health food store while I was in the neighbourhood to look for a few things I needed for lunch next week. With the help of another website (I'll share which one soon), I've planned five gluten free vegetarian lunches for next week. Two things I wanted to include in those lunches were Mary's Organic gluten free crackers (with hummous that I also bought) and Herbamare seasoning. I found them both and bought them. I also picked up what I needed for dinner, walked home and got a call from my daughter. Finally! She's having a great time, but said she still misses me (I miss her too). But what a great summer vacay for her while my husband and I work (unfair!).

After the phone call, I went to pick up my hubby from work. We came home and I couldn't help it any longer...I needed to try one of my crackers to see if they tasted good. So I did. With hummous.

They were good. I'll definitely be buying these again. Can't wait to pack them in my lunch!

Tonight's dinner was steak (for my hubby) with grilled potatoes and asparagus. Not that I need an excuse, but because I was BBQing I had a vodka cooler. I'm never looking at the calories on these things because it would probably be depressing. They taste good! The good news is I basically never drink these during the winter... ;-)

My hubby said his steak turned out perfectly, and I'll have to take his word for it. The potatoes were awesome...I love them like this. As for the asparagus, we sauteed them in a bit of olive oil and butter, along with minced garlic, sea salt and pepper. At the very end, I threw on some Parmesan cheese for good measure. Not the healthiest cooking method, but they tasted real good too!

And finally...for a late dessert while I watched a movie - a protein bar. I added more seeds, cranberries and nuts this time and the bars turned out great. Still more of a fudge texture than a bar texture, but hey...I'm okay with that!

Overall, even though my breakfast was weak and my dinner a bit small, I felt like today was a good day. I got my workout in. I drank a ton of water. I made my protein bars. I planned out lunch for a week. I got my blog done. Can't wait to see what tomorrow brings! I'll give you a hint....it involves bicycles...

Good night! :-)
