Weak start, strong finish

You would think that by making my lunch last night that this morning would be easy. WRONG. I slept in. Why? Because I was up til' midnight cooking. I swear I can't win! I also can't complain too much. Planning healthy meals sure is a lot of work. But the results - how I feel and how I look - are well worth it!

Unfortunately for me, because of the sleep in, I skipped breakfast. Instead, I stopped at Starbucks on my way to the bus and got a soy chai latte for the ride. I know, I know....


I must say though that this whole Starbucks consumption management thing is something I'm really proud of. You're looking at a girl who was drinking 1-2 chai lattes PER DAY. I've gone from that (and at minimum $139/month) to drinking 3 soy chai lattes per week (at $55/month). Those savings pays for my Burnaby Hit membership and then some! :-)

By the time I got to work, my body was screaming..."I need food NOW!" So I answered with a chopped up nectarine.


I love nectarines! They are one of my favourite fruits, but are super messy to eat, so I cut them up now, especially when bringing them to work.

After my morning snack/delayed breakfast, I checked a few things off of my to-do at work today list and it was lunch time. Today I opted for the lunch room, because soup was on the menu and it wasn't something I wanted to heat and then bring outside. Too much work! The positive to eating in the lunch room was that I got to have some nice non-work conversation with some of my coworkers.

Any guesses on what's below?


If you guessed carrot-apple-ginger soup and millet you are right! (Yeah right, who would guess that? I know I wouldn't have!).   I was skeptical about this soup, particularly since I've NEVER had carrot soup before AND would never have thought to put apple in my soup. I don't eat apples period, but something about this soup was calling my name! So...I decided to give it a shot and followed the recipe to a tee. I'm glad I did! This soup is delicious. In fact, I think I'm going to freeze some for a future lunch.

Millet is also something that I've never eaten before. Turns out it's a lot like quinoa. To make it, I toasted the dry millet (1/2 cup) in a pan for a few minutes, until it started smelling nutty. I then added water (3/4 cup) and some herbavare seasoning, brought it to a boil, covered and simmered for about 25 minutes. Because I did this last night, I cooled it off, threw it in the fridge and reheated it today with a tiny bit of butter and a bit more herbavare seasoning. I enjoyed it, but it was rather plain tasting, sort of like eating seasoned white rice. I'm okay with that (I love rice period), but I know my husband wouldn't like it. Guess it's all about personal preference! I'll make it again, 'cause it suited me just fine.

Today was a 'working late' day, so by the time the late afternoon rolled around I needed a snack/energy boost. At this point, my choices were eat a snack or fall asleep during the interview I was conducting at 4:30pm. So I munched on my homemade trail mix.


This right here is the reason I was looking for chocolate covered cacao nibs and goji berries. My trail mix consisted of a 1/2 cup of each of the above ingredients, plus a 1/2 cup of dried cranberries and almonds.

Apparently goji berries and cacao nibs are super foods. To be honest, I'm not quite crazy about this trail mix. It was edible, but I'm not really a fan of dark chocolate...I guess it's an acquired taste? Maybe I'm just weird, but I found that if I picked things out to eat one at a time, I didn't like it, but if I grabbed small handfuls of it mixed together it I liked it more. I'll definitely use up what I have left of the trail mix, but I'm not sure I'll make it the exact same way again. Any suggestions for other healthy add-ins?

After my trail mix snack, and my interview, it was time to run my program. It went well (and quick) so I was able to leave a bit early. Cheers to that!

My hubby picked me up and we headed home. The plan was to make dinner and go for a run, but when we got home, neither of us were all that hungry and my husband wanted to stop by a friend's place so we decided to put dinner off until later. He went out. I went for a run! But first I ate this to tie me over until dinner.


I love me some protein bars! I pushed myself hard today and ran 4.6kms in 25 minutes! The only problem was that when I got home I felt like throwing up! Maybe from running on an emptyish stomach?

My hubby got home shortly after me and we both decided that our dinner plans (BBQ chicken - for him - with potatoes and asparagus) was a bit of a write off considering that it was now around 9pm. He said he'd fend for himself, so I settled on some leftover avocado-lime black bean salad with Mary's Crackers and hummous. I seriously LOVE this salad. I know I said this yesterday, but try it. It's so good!


After dinner, I cooked some chickpeas and wheatberries for tomorrow's lunch. Stay tuned to see what I do with them! I then collapsed on the couch and junked out on TV. Hell's Kitchen (pvr'd) was tonight's choice. And that pretty much sums up my night.

With the exception of skipping my breakfast, I'm pretty happy with today's food choices. I also drank a ton of water today which is something I'm trying hard to commit to. I can't tell you how great my body is feeling these days! I've tried dieting without exercise and exercise while eating whatever/whenever and neither worked well...which led to me becoming depressed, giving up completely and ultimately feeling worse about myself than when I started! The kickboxing circuit combined with running and a solid effort at changing my eating habits is getting me the results I was looking for. And seeing the results, combined with how good and proud I feel is keeping me motivated. Along with you all of course! I've managed to take a vicious and unhealthy cycle and turned it into a positive and rewarding cycle. So on that note, I'm going to bed...with a great big smile on my face :-D
